Asparagus Tart

Ingredients:

  • 1 pre-made pie crust
  • 1 lb. asparagus, trimmed
  • 4 large eggs
  • 1/2 cup heavy cream
  • 1/2 cup milk
  • 1/2 cup crumbled feta cheese
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions:

  1. Preheat oven to 375°F.
  2. Roll out the pie crust and transfer it to a 9-inch tart pan. Trim the edges and prick the bottom with a fork. Bake for 10 minutes, until the crust is lightly golden. Remove from oven and allow to cool.
  3. Steam asparagus until tender, about 5-6 minutes. Set aside.
  4. In a medium bowl, whisk together eggs, cream, milk, feta cheese, black pepper, and salt.
  5. Arrange the cooled asparagus evenly on the bottom of the tart shell, then carefully pour in the egg and cream mixture.
