Ingredients

  • 1 baguette
  • 2 tbsp mayonnaise
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1/2 tbsp rice vinegar
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 garlic clove, minced
  • 6 oz cooked pork, sliced or shredded
  • 1/2 cup pickled carrots and daikon
  • 1/4 cup thinly sliced cucumber
  • 1/4 cup fresh cilantro
  • Sriracha sauce (optional)

Instructions

  1. Preheat oven to 350°F.
  2. Cut the baguette into 6-inch pieces, and slice down the middle to create a pocket.
  3. Spread the mayonnaise on both sides of the bread.
  4. In a small bowl, whisk together the soy sauce, honey, rice vinegar, salt, pepper, and minced garlic. Pour the mixture over the pork and toss to coat.
  5. Stuff each sandwich with the pork and top with pickled carrots and daikon, cucumber, and fresh cilantro.
  6. Place the sandwiches on a baking sheet and bake for 8-10 minutes, until the bread is toasted and the pork is warmed through.
  7. Drizzle with Sriracha sauce, if desired, and serve immediately.
