Buckwheat tart, fresh sardines and Roscoff onions

Buckwheat Tart with Fresh Sardines and Roscoff Onions

Ingredients:

  • 1 cup buckwheat flour
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/4 cup olive oil
  • 1/2 cup water
  • 6-8 fresh sardines, scaled and gutted
  • 6-8 Roscoff onions, peeled and sliced
  • 2 tablespoons butter
  • 1 tablespoon fresh thyme leaves
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the buckwheat and all-purpose flour with 1 teaspoon of salt.
  3. Add the olive oil and water to the flour mixture and knead until a smooth dough forms.
  4. Roll out the dough on a floured surface and transfer to a lightly greased tart pan. Press the dough firmly into the pan and trim the edges with a sharp knife.
  5. Bake the tart shell in the preheated oven for 15-20 minutes or until lightly golden brown. Allow it to cool before filling.
  6. In a large skillet, melt the butter over medium heat and add the sliced Roscoff onions. Cook until the onions become tender, about 10-12 minutes.
  7. Season the fresh sardines with salt and freshly ground black pepper on both sides.
  8. Heat another skillet over medium-high heat and add a drizzle of olive oil to the pan.
  9. When the oil is hot, add the fresh sardines to the skillet and cook for 2-3 minutes per side until they are lightly browned. Remove from heat and set aside.
  10. Add the cooked Roscoff onions to the cooled tart shell and spread evenly. Place the cooked sardines on top of the onions in a single layer.
  11. Sprinkle fresh thyme leaves on top of the sardines and bake in the oven for an additional 15-20 minutes, or until the tart is golden brown and the fish is cooked through.
  12. Serve hot or cold, garnished with fresh herbs, if desired.
