Bulgur-Eggplant Burgers Recipe

Ingredients

  • 1 cup bulgur
  • 1 large eggplant, peeled and diced
  • 1 onion, grated
  • 2 garlic cloves, minced
  • 1 cup breadcrumbs
  • 1/2 cup chopped parsley
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. In a large pot, boil 2 cups of water and add bulgur. Stir, cover and simmer for 20 minutes.
  2. In a large skillet, heat olive oil over medium heat. Add grated onion and minced garlic. Cook for 2-3 minutes, until the onions are tender.
  3. Add the diced eggplant to the skillet and cook for 10-12 minutes, stirring occasionally until it is soft and browned
  4. In a large mixing bowl, mix together the cooked bulgur, eggplant, onion and garlic mixture, breadcrumbs, parsley, cumin, paprika, salt and pepper until well combined.
  5. Form mixture into patties. If mixture is too sticky, add more breadcrumbs to help bind.
  6. In a large nonstick skillet, heat olive oil over medium heat. Fry patties on each side until browned and cooked through, about 4-5 minutes on each side.
  7. Serve burgers with fresh buns, lettuce, tomato, onion, and your favorite condiments. Enjoy!
