Bulgur-Eggplant Burgers Recipe
Ingredients
- 1 cup bulgur
- 1 large eggplant, peeled and diced
- 1 onion, grated
- 2 garlic cloves, minced
- 1 cup breadcrumbs
- 1/2 cup chopped parsley
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Olive oil for frying
Instructions
- In a large pot, boil 2 cups of water and add bulgur. Stir, cover and simmer for 20 minutes.
- In a large skillet, heat olive oil over medium heat. Add grated onion and minced garlic. Cook for 2-3 minutes, until the onions are tender.
- Add the diced eggplant to the skillet and cook for 10-12 minutes, stirring occasionally until it is soft and browned
- In a large mixing bowl, mix together the cooked bulgur, eggplant, onion and garlic mixture, breadcrumbs, parsley, cumin, paprika, salt and pepper until well combined.
- Form mixture into patties. If mixture is too sticky, add more breadcrumbs to help bind.
- In a large nonstick skillet, heat olive oil over medium heat. Fry patties on each side until browned and cooked through, about 4-5 minutes on each side.
- Serve burgers with fresh buns, lettuce, tomato, onion, and your favorite condiments. Enjoy!
