Cabbage Haddock Recipe
Ingredients
- 2 haddock fillets
- 1 small cabbage, chopped
- 1 onion, chopped
- 2 garlic cloves, minced
- 1/4 cup white wine (optional)
- 1/2 cup chicken or vegetable broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Season the haddock fillets with salt and pepper and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 3 minutes.
- Add the chopped cabbage and cook until it starts to wilt, about 5 minutes.
- If using, pour the white wine into the skillet and let it cook for 1-2 minutes until it reduces slightly.
- Add the chicken or vegetable broth and stir to combine.
- Transfer the cabbage mixture to a baking dish and place the haddock fillets on top.
- Cover the baking dish with foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 5-10 minutes until the haddock is cooked through and the cabbage is browned on top.
- Remove from the oven and serve hot.
