Cabbage Haddock Recipe

Ingredients

  • 2 haddock fillets
  • 1 small cabbage, chopped
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1/4 cup white wine (optional)
  • 1/2 cup chicken or vegetable broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the haddock fillets with salt and pepper and set aside.
  3. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 3 minutes.
  4. Add the chopped cabbage and cook until it starts to wilt, about 5 minutes.
  5. If using, pour the white wine into the skillet and let it cook for 1-2 minutes until it reduces slightly.
  6. Add the chicken or vegetable broth and stir to combine.
  7. Transfer the cabbage mixture to a baking dish and place the haddock fillets on top.
  8. Cover the baking dish with foil and bake in the preheated oven for 25 minutes.
  9. Remove the foil and bake for an additional 5-10 minutes until the haddock is cooked through and the cabbage is browned on top.
  10. Remove from the oven and serve hot.
