Calamarata (Pasta with Calamari and Tomato Sauce) Recipe
Ingredients:
- 1 lb of Calamari, cleaned and cut into rings
- 1 lb of Calamarata Pasta
- 2 tablespoons of Olive Oil
- 1 medium Onion, diced
- 4 Garlic cloves, minced
- 1 can (28 oz) of Crushed Tomatoes
- 1/2 cup of White Wine
- 1/4 cup of Fresh Parsley, chopped
- Salt and Red Pepper flakes, to taste
Instructions:
- Start by heating the olive oil in a large pan over medium heat. When the oil is hot, add the onion and cook for 5 minutes or until they become translucent.
- Add the minced garlic and cook for another minute until fragrant. Do not let the garlic brown as it can become bitter.
- Add the calamari rings to the pan and cook for 5-7 minutes, or until tender. Make sure not to overcook the calamari as it can become rubbery.
- Pour in the white wine and let the mixture simmer for 5 minutes or until the liquid has reduced by half.
- Add the can of crushed tomatoes to the pan, along with salt and red pepper flakes, to taste. Heat over medium heat and let the sauce simmer for 15-20 minutes until it thickens.
- Cook the Calamarata pasta according to the instructions on the package. Make sure to cook it al dente, so it is still slightly firm to the bite.
- Drain the pasta and add it to the pan with the calamari tomato sauce. Toss the pasta with the sauce until it is well coated.
- Garnish the pasta with fresh parsley and serve hot.
