Ingredients:

  • 1 capon
  • 1 lb chestnuts, peeled and chopped
  • 1 cup breadcrumbs
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp fresh rosemary, chopped
  • 1/2 cup chicken stock
  • 1/4 cup olive oil
  • Salt and pepper to taste

Directions:

  1. Preheat your oven to 350°F (180°C).
  2. In a pan, sauté the onion and garlic until translucent. Add the chestnuts and cook for 5-7 minutes or until they are tender. Stir in the breadcrumbs, rosemary, chicken stock, salt, and pepper.
