Cassoulet Recipe

Ingredients

  • 1 pound white beans
  • 8 cups water
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 1 pound bacon, chopped
  • 1 pound boneless pork shoulder, chopped
  • 1 pound sausage, sliced
  • 1 tablespoon tomato paste
  • 2 cups chicken broth
  • 2 bay leaves
  • 1 tablespoon thyme
  • 1 tablespoon parsley
  • Salt and pepper to taste

Instructions

  1. Soak the beans in water overnight.
  2. Drain and rinse the beans. Place them in a large pot with the water, garlic, onion, carrot, and celery. Bring to a boil and simmer for about an hour.
  3. In a separate pan, cook the bacon until crispy. Remove from pan and set aside.
  4. In the same pan, brown the pork shoulder. Remove from pan and set aside.
  5. Using the same pan, brown the sausage. Remove from pan and set aside.
  6. Add the bacon, sausage, and pork shoulder back to the pan. Add tomato paste and chicken broth. Stir and cook for a few minutes to combine.
  7. Add the meat mixture to the pot with the beans and vegetables. Add bay leaves, thyme, parsley, salt, and pepper. Simmer for another hour or until the beans are tender and the meat is cooked through.
  8. Serve hot.
