Catalan-style Monkfish Recipe

Ingredients:

  • 1 1/2 pounds monkfish fillets
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 medium tomatoes, chopped
  • 1/4 cup olive oil
  • 1/4 tsp. crushed red pepper flakes
  • 1/2 cup dry white wine
  • 1/2 cup fish stock or water
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions:

  1. Season the monkfish fillets with salt and pepper on both sides.
