Ingredients

  • 1 head of cauliflower, chopped into bite-sized pieces
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon of ginger, minced
  • 1 can of tomato sauce
  • 1 tablespoon of garam masala
  • 1 teaspoon of turmeric
  • 1/2 teaspoon of cumin
  • 1/2 teaspoon of coriander
  • 1/4 teaspoon of cayenne pepper
  • 1 cup of basmati rice
  • 1 3/4 cups of water
  • 1/4 cup of chopped cilantro
  • 2 tablespoons of cooking oil
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine onion, garlic, ginger, tomato sauce, garam masala, turmeric, cumin, coriander, and cayenne pepper. Mix well.
  2. Add the chopped cauliflower to the mixing bowl and toss until all pieces are evenly coated with the mixture. Let it marinate for 30 minutes.
  3. Add 2 tablespoons of cooking oil to a large frying pan and heat over medium-high heat.
  4. Add the marinated cauliflower to the pan and cook, stirring occasionally, until the cauliflower is tender and slightly charred, about 10-12 minutes.
  5. In a medium-sized saucepan, bring 1 3/4 cups of water to a boil.
  6. Add 1 cup of basmati rice to the boiling water, reduce the heat to low, and cover the pot with a lid. Allow the rice to simmer for 20 minutes or until fully cooked.
  7. Fluff the rice with a fork and add salt and pepper to taste.
  8. Serve the cauliflower tikka masala over the cooked rice and garnish with chopped cilantro.
