Cheese of the Duchess Recipe

Ingredients:

  • 2 cups of whole milk
  • 1 cup of heavy cream
  • 1/2 teaspoon of salt
  • 1 tablespoon of lemon juice

Instructions:

  1. Combine the whole milk and heavy cream in a heavy-bottomed saucepan and heat over medium heat until the mixture reaches a temperature of 180°F.
  2. Add the salt and lemon juice to the mixture and stir gently until well combined.
  3. Reduce the heat to low and continue to stir gently for another 5 minutes.
  4. Remove the saucepan from the heat and let it sit undisturbed for 10 minutes.
  5. Line a colander with cheesecloth and place the colander over a bowl.
  6. Pour the milk mixture into the colander and let it drain for at least 1 hour. The longer you let it drain, the firmer the cheese will be.
  7. Remove the cheese from the cheesecloth and wrap it in plastic wrap. Refrigerate until ready to serve.
