Chicken-avocado sandwich: easy recipe (4 steps – 30 min)


Chicken-Avocado Sandwich Recipe

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 ripe avocados, pitted and mashed
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lime juice
  • Salt and pepper to taste
  • 8 slices of bread
  • 4 slices of cheese (optional)
  • 2 tablespoons butter, softened

Directions:

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Season chicken breasts with salt and pepper. Place them on a baking sheet and bake for 25-30 minutes or until cooked through. Once cooked, remove from oven and let them cool down for 5-10 minutes, then slice into thin pieces.
  3. In a small bowl, mix together mashed avocado, mayonnaise, sour cream, garlic, lime juice, and salt and pepper to taste.
  4. Take 2 slices of bread and butter one side of each slice. On the non-buttered side of one slice, spread a generous amount of the avocado mixture. Top with sliced chicken, cheese (optional), and the other bread slice, buttered side facing out.
  5. Repeat step 4 for all the sandwiches.
  6. Heat a large skillet over medium-high heat. Place sandwiches in the skillet and cook for 2-3 minutes per side or until the bread is golden brown and the cheese is melted (if using).
  7. Take out from heat, slice and serve hot.
