Chicken skewers, tomato salad with two olives


Chicken Skewers Recipe

Ingredients:

  • 1lb chicken breast, cubed
  • 1 red bell pepper, chopped into chunks
  • 1 yellow bell pepper, chopped into chunks
  • 1 red onion, chopped into chunks
  • 2 garlic cloves, minced
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp paprika
  • 1 tsp cumin
  • Salt and pepper

Instructions:

  1. Preheat grill to medium-high heat.
  2. In a bowl, combine olive oil, balsamic vinegar, minced garlic, paprika, cumin, salt and pepper.
  3. Add cubed chicken and let marinate for 10-15 minutes.
  4. Thread chicken cubes, red bell pepper, yellow bell pepper and red onion onto skewers.
  5. Grill skewers for 8-10 minutes, or until chicken is cooked through and vegetables are slightly charred.
