Chicken with Morels: Recipe with Mushrooms

Ingredients:

  • 4 bone-in, skin-on chicken thighs
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1 tablespoon olive oil
  • 1/2 onion, chopped
  • 8 oz fresh morel mushrooms, cleaned and stems removed
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 tablespoon fresh thyme leaves

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Rinse chicken thighs and pat dry with paper towels. Season both sides with salt, pepper, and paprika.
  3. Heat a large ovenproof skillet over medium-high heat. Add olive oil and swirl to coat the pan.
  4. Place chicken thighs skin side down in the hot skillet. Cook for 5-6 minutes until golden brown, then flip and cook for another 2-3 minutes on the other side. Remove chicken from the pan and set aside.
  5. Add chopped onion to the skillet and cook for 2-3 minutes until softened.
  6. Add morels and cook for 2-3 minutes until they release their moisture and start to brown.
  7. Pour in chicken broth and heavy cream. Stir and scrape the bottom of the skillet to release any browned bits.
  8. Bring the sauce to a boil, then reduce heat to low. Add fresh thyme leaves and stir to combine.
  9. Add chicken thighs back into the skillet, skin side up. Transfer skillet to the preheated oven and bake for 20-25 minutes, or until chicken is cooked through.
  10. Remove from oven and let it cool for a couple of minutes before serving.
