Chili and Nachos with Cheddar Sauce Recipe
Ingredients:
- 1 pound ground beef
- 1 can kidney beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 1 bag tortilla chips
- 1 cup shredded cheddar cheese
- 1/2 cup milk
Instructions:
- In a large pot, brown the ground beef over medium-high heat until fully cooked.
- Add the diced onion and garlic and cook until softened, about 5 minutes.
- Add the chili powder, cumin and salt and pepper to the pot and stir to combine with the beef.
- Add the kidney beans, corn and diced tomatoes and stir to combine.
- Lower the heat to medium and let the chili simmer for 10-15 minutes.
- In a separate pot, heat the milk until it just starts to steam.
- Add the shredded cheddar cheese to the pot of milk, stirring constantly until melted and combined.
- Arrange the tortilla chips on a platter or individual plates.
- Pour the chili over the chips, then drizzle with the cheddar sauce.
