Chili and Nachos with Cheddar Sauce Recipe

Ingredients:

  • 1 pound ground beef
  • 1 can kidney beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 bag tortilla chips
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk

Instructions:

  1. In a large pot, brown the ground beef over medium-high heat until fully cooked.
  2. Add the diced onion and garlic and cook until softened, about 5 minutes.
  3. Add the chili powder, cumin and salt and pepper to the pot and stir to combine with the beef.
  4. Add the kidney beans, corn and diced tomatoes and stir to combine.
  5. Lower the heat to medium and let the chili simmer for 10-15 minutes.
  6. In a separate pot, heat the milk until it just starts to steam.
  7. Add the shredded cheddar cheese to the pot of milk, stirring constantly until melted and combined.
  8. Arrange the tortilla chips on a platter or individual plates.
  9. Pour the chili over the chips, then drizzle with the cheddar sauce.
