Chocolate Coconut Bars Recipe

Ingredients

  • 1 cup unsweetened shredded coconut
  • 1 cup almond flour
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1/4 tsp salt
  • 1/2 cup dark chocolate chips
  • 1 tsp coconut oil, melted

Instructions

  1. Preheat oven to 350°F (180°C). Line an 8×8 inch baking dish with parchment paper.
  2. In a large bowl, combine shredded coconut, almond flour, melted coconut oil, maple syrup, and salt. Mix until well combined.
  3. Press mixture into the prepared baking dish and bake for 12-15 minutes, until golden brown. Let cool completely.
  4. In a small bowl, melt chocolate chips and 1 tsp of coconut oil in the microwave or over a double boiler.
  5. Spread melted chocolate over the cooled coconut mixture. Refrigerate for 10-15 minutes or until chocolate has hardened.
  6. Cut into bars and serve.
