Chocolate Profiteroles Recipe
Ingredients
- 1 cup water
- 1/2 cup unsalted butter
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 4 large eggs
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 8 ounces semisweet chocolate, chopped
- 1/2 cup heavy cream
Instructions
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- In a medium saucepan, combine water, butter, and salt. Bring to a boil over medium heat.
- Add flour all at once, stirring vigorously with a wooden spoon until mixture forms a ball and pulls away from sides of pan.
- Remove from heat and let cool for 5 minutes.
- Beat in eggs one at a time, making sure each egg is fully incorporated before adding the next. The batter will be smooth and glossy.
- Transfer batter to a pastry bag fitted with a 1/2-inch plain tip. Pipe mixture into 1-inch mounds, spacing them 2 inches apart, onto prepared baking sheet.
- Bake for 25-30 minutes or until golden brown. Transfer to a wire rack to cool completely.
- In a large mixing bowl, beat the heavy cream, powdered sugar, and vanilla until soft peaks form.
- Cut profiteroles in half horizontally. Fill each with a dollop of whipped cream.
- Place chopped chocolate in a heatproof bowl. In a small saucepan, bring cream to a simmer over medium heat. Pour over chocolate; let stand for 5 minutes. Whisk until smooth.
- Dip the top of each profiterole in the chocolate and place it on a serving tray. To serve, drizzle with any leftover chocolate ganache.
