Clam Pasta: Roman Recipe
Ingredients:
- 1 lb. spaghetti
- 2 dozen clams, scrubbed and purged
- 3 cloves garlic, chopped
- 1/4 cup extra-virgin olive oil
- 1/2 cup dry white wine
- 1 tbsp. chopped fresh Italian parsley
- Salt and pepper to taste
Instructions:
- Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente, about 8-10 minutes.
- While the spaghetti is cooking, heat the olive oil in a large pan over medium heat. Add the garlic and cook until fragrant, about 1 minute.
- Add the clams to the pan, increase the heat to medium-high, and pour in the white wine. Cover the pan and let cook for 5-7 minutes, shaking the pan occasionally, until the clams have opened up.
- When the spaghetti is cooked, drain it and add it to the pan with the clams. Toss everything together and cook for 1-2 minutes until well combined and heated through. If the mixture is too dry, add a bit of the pasta cooking water to moisten it.
- Sprinkle with chopped parsley and season with salt and pepper to taste.
Verdict:
This clam pasta is a classic Roman dish that is simple to make, yet absolutely delicious. The clams add a briny flavor to the pasta, while the garlic and white wine create a savory sauce that coats every strand of spaghetti. The dish is perfect for a weeknight dinner or a cozy date night at home.
Serving Suggestions:
– Serve with a crisp green salad and crusty bread for a complete meal.
– Pair with a light Italian white wine, such as Pinot Grigio or Vermentino.
– Sprinkle with grated Parmesan cheese for an extra burst of flavor.
