Clam pasta: Roman recipe

Clam Pasta: Roman Recipe

Ingredients:

  • 1 lb. spaghetti
  • 2 dozen clams, scrubbed and purged
  • 3 cloves garlic, chopped
  • 1/4 cup extra-virgin olive oil
  • 1/2 cup dry white wine
  • 1 tbsp. chopped fresh Italian parsley
  • Salt and pepper to taste

Instructions:

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente, about 8-10 minutes.
  2. While the spaghetti is cooking, heat the olive oil in a large pan over medium heat. Add the garlic and cook until fragrant, about 1 minute.
  3. Add the clams to the pan, increase the heat to medium-high, and pour in the white wine. Cover the pan and let cook for 5-7 minutes, shaking the pan occasionally, until the clams have opened up.
  4. When the spaghetti is cooked, drain it and add it to the pan with the clams. Toss everything together and cook for 1-2 minutes until well combined and heated through. If the mixture is too dry, add a bit of the pasta cooking water to moisten it.
  5. Sprinkle with chopped parsley and season with salt and pepper to taste.

Verdict:

This clam pasta is a classic Roman dish that is simple to make, yet absolutely delicious. The clams add a briny flavor to the pasta, while the garlic and white wine create a savory sauce that coats every strand of spaghetti. The dish is perfect for a weeknight dinner or a cozy date night at home.

Serving Suggestions:

– Serve with a crisp green salad and crusty bread for a complete meal.
– Pair with a light Italian white wine, such as Pinot Grigio or Vermentino.
– Sprinkle with grated Parmesan cheese for an extra burst of flavor.
