Ingredients:

  • 1-pound chicken breast, cut into bite-sized pieces
  • 1 cup uncooked quinoa
  • 2 cups chicken broth
  • 1 cup diced onion
  • 1 cup diced carrot
  • 1 cup diced celery
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon dried thyme
  • 1/2 teaspoon salt
