Cream of Lentils with Bacon
Ingredients
- 1 cup dried lentils
- 4 cups chicken broth
- 2 teaspoons olive oil
- 1/2 onion, chopped
- 3 cloves garlic, minced
- 4 slices bacon, chopped
- 1 tablespoon tomato paste
- 1/2 teaspoon dried thyme
- 1/4 teaspoon ground cumin
- 1 bay leaf
- 1/4 cup heavy cream
- Salt and black pepper, to taste
Instructions
- Rinse lentils and place them in a large pot with chicken broth. Bring to a boil, reduce heat and let simmer for about 20-25 minutes, until the lentils are tender.
- In a separate pan, heat olive oil over medium heat. Add onion and garlic, and cook until the onion is translucent.
- Add the bacon and cook until crisp.
- Stir in tomato paste, thyme, cumin, and bay leaf. Cook for 2-3 minutes.
- Add the onion and bacon mixture to the pot with the lentils.
- Use an immersion blender to puree the soup until smooth.
- Stir in heavy cream.
- Season with salt and black pepper, to taste.
- Serve hot.
