Ingredients:

  • 1 lb Crozets pasta
  • 1/2 lb thick-cut bacon, diced
  • 1 small onion, diced
  • 1 garlic clove, minced
  • 1 cup heavy cream
  • 1/2 cup white wine
  • 1/2 lb Reblochon cheese, thinly sliced
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cook the Crozets pasta in a large pot of boiling salted water until tender but still firm to the bite (about 15 minutes). Drain and transfer to a large bowl.
  3. In a large skillet, cook the diced bacon over medium heat until crispy (about 10 minutes). Use a slotted spoon to transfer the bacon to a paper towel-lined plate.
  4. Add the onion to the bacon fat and cook until softened (about 5 minutes). Add the garlic and cook for an additional minute.
  5. Stir in the heavy cream and white wine and bring to a simmer. Cook for a few minutes until slightly thickened.
  6. Add the bacon to the skillet and stir to combine.
  7. Pour the bacon and cream mixture over the cooked pasta and stir well.
  8. Pour the pasta and bacon mixture into a large 9×13 inch baking dish and layer the thinly sliced Reblochon cheese on top.
  9. Place in the oven and bake for about 20 minutes or until the cheese is melted and bubbly.
  10. Remove from the oven, let cool slightly and serve.
