Donuts (Filled Donuts) Recipe
Ingredients:
- 2 and 1/4 cups all-purpose flour (285g)
- 1/3 cup granulated sugar (67g)
- 2 and 1/4 teaspoons instant yeast (1 standard package)
- 1/2 teaspoon salt
- 1/2 cup whole milk (120ml)
- 1/4 cup unsalted butter, melted (57g)
- 2 large eggs, beaten
- 1 teaspoon vanilla extract
- Oil, for frying
- Filling of your choice: jam, Nutella, custard, etc.
- Powdered sugar, for dusting
Instructions:
- In a large mixing bowl, whisk together flour, sugar, yeast, and salt.
- In a small saucepan, heat milk until warm. Remove from heat and stir in melted butter, eggs, and vanilla extract.
- Pour wet ingredients into dry ingredients and mix until a soft dough forms. Knead dough on a floured surface for about 5 minutes until smooth and elastic.
- Place dough in a greased bowl and cover with a clean towel or plastic wrap. Let dough rise in a warm, draft-free place for about 1 hour until it doubles in size.
- Punch down dough and roll it out to about 1/2 inch thickness. Use a donut cutter or a cookie cutter to cut out circles. Re-roll leftover dough scraps and cut out more circles.
- Place cut-out dough circles on a lightly floured surface and cover with a towel. Let them rise for 20-30 minutes until they are puffy.
- Heat oil in a deep fryer or a large heavy pot over medium-high heat until it reaches 350°F (175°C). Fry donuts, a few at a time, for about 1-2 minutes on each side until golden brown. Use a slotted spoon or tongs to transfer donuts to a wire rack to cool.
- To fill donuts, cut a small slit on the side of each donut with a knife or kitchen scissors. Fill a pastry bag with your desired filling and insert the tip into the slit. Squeeze gently to fill the donut with about 1-2 tablespoons of filling.
- Dust donuts with powdered sugar and serve immediately.
