Ingredients:

  • 4 duck breasts, skin removed
  • 8 small plums, pitted and sliced
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch
  • Salt and pepper to taste
  • 8-10 spring onion stalks

Instructions:

  1. Preheat the oven to 200°C/400°F.
  2. Cut duck breasts in half lengthwise and season with salt and pepper.

  4. Place the duck onto a flat surface, and divide the sliced plums and spring onions among the duck breasts.

  6. Heat a large skillet over medium-high heat and add the duck rolls.
  7. Cook the duck rolls for 3-4 minutes per side or until browned.
  8. Transfer the duck rolls to a baking dish and brush with the honey mixture.
  9. Bake for 15-20 minutes or until fully cooked and tender.
  10. Remove the toothpicks and slice the duck rolls into 1-inch pieces.
  11. Serve hot with remaining honey mixture.
