Duck Tagine with Figs Recipe

Ingredients:

  • 4 duck legs
  • 2 onions, sliced
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 2 cups of chicken broth
  • 1 tbsp honey
  • 1/2 cup dried figs, chopped
  • Salt and black pepper to taste
  • 2 tbsp olive oil
  • 1/4 cup chopped fresh cilantro

Instructions:

  1. Season the duck legs with salt and black pepper.
  2. Heat the olive oil in a tagine or a Dutch oven over medium-high heat. Sear the duck legs until browned on all sides, approximately 6 minutes per side. Remove from the pan and set aside.
  3. Add the sliced onions and minced garlic to the same pot and sauté for 5 minutes until softened.
  4. Mix ground cumin, ground ginger, ground cinnamon, ground coriander, and ground turmeric in a small bowl, add it to the pot and stir until mixed well.
  5. Return the duck legs to the pot and add enough chicken broth to cover them. Bring to a simmer and cover the tagine or Dutch oven.
  6. Cook the duck legs over low heat for about 2 hours or until tender.
  7. Remove the duck legs from the pot and keep them warm.
  8. Add the honey and chopped figs to the cooking liquid, then simmer until the liquid thickens, which should take around 10 minutes.
  9. Return the duck legs to the pot and warm them in the sauce.
  10. Sprinkle with fresh cilantro and serve.
