Chickpea Soup Recipe

Ingredients

  • 2 cups cooked chickpeas
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 3 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon ground ginger
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat the olive oil in a large saucepan over medium heat.
  2. Add the onions and garlic, and sauté until the onions are translucent.
  3. Add the chickpeas, vegetable broth, cumin, paprika, cinnamon, coriander, ginger, salt, and pepper. Stir to combine.
  4. Bring the mixture to a boil, reduce heat to low, and simmer for 10-15 minutes.
  5. Remove the soup from heat and let it rest for about 5 minutes.
  6. Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer the soup to a blender or food processor and blend until smooth in batches.
  7. Return the soup to the saucepan and heat over low heat until heated through.
