Ingredients

  • 2 large eggplants
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can tomatoes, drained and chopped
  • 1/2 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 8 oz. brocciu cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the eggplants into slices about 1/4 inch thick.
  3. Brush the eggplant slices with olive oil on both sides, then grill them on a hot grill or grill pan until they are golden brown and tender.
  4. Meanwhile, heat the remaining olive oil in a pan.
  5. Add onions, and garlic to it, and fry them until onions become translucent and tender.
  6. Add chopped tomatoes, sugar, salt, black pepper, and nutmeg.
  7. Let the mixture simmer for about 15-20 minutes until the sauce has thickened.
  8. Next, add the brocciu cheese, and stir until the cheese is melted and combined with the sauce.
  9. Once eggplants are cooked, place them in a baking dish.
  10. Cover the eggplants with the brocciu sauce.
  11. Sprinkle grated Parmesan cheese on top.
  12. Bake in the oven for 20-25 minutes or until the cheese is melted and bubbly.
