Eggplant au gratin with brocciu passu
Ingredients
- 2 large eggplants
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can tomatoes, drained and chopped
- 1/2 teaspoon sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 8 oz. brocciu cheese

Instructions
- Preheat the oven to 375°F (190°C).
- Cut the eggplants into slices about 1/4 inch thick.
- Brush the eggplant slices with olive oil on both sides, then grill them on a hot grill or grill pan until they are golden brown and tender.
- Meanwhile, heat the remaining olive oil in a pan.
- Add onions, and garlic to it, and fry them until onions become translucent and tender.
- Add chopped tomatoes, sugar, salt, black pepper, and nutmeg.
- Let the mixture simmer for about 15-20 minutes until the sauce has thickened.
- Next, add the brocciu cheese, and stir until the cheese is melted and combined with the sauce.
- Once eggplants are cooked, place them in a baking dish.
- Cover the eggplants with the brocciu sauce.
- Sprinkle grated Parmesan cheese on top.
- Bake in the oven for 20-25 minutes or until the cheese is melted and bubbly.
- Serve hot and enjoy.
