Ingredients:

  • 6 endives, trimmed and halved lengthways
  • 3 tbsp butter
  • 3 tbsp plain flour
  • 500ml whole milk
  • 1 tsp Dijon mustard
  • 150g grated Gruyere cheese
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 200° C.
  2. Bring a large pot of salted water to a boil. Add endives and cook for 5 minutes. Drain and allow to cool.
  3. Melt butter in a saucepan over medium heat. Add flour and whisk constantly for 2 minutes, until the mixture begins to turn golden. Gradually whisk in milk until smooth. Bring to the boil and simmer until thickened, stirring constantly. Stir in Dijon mustard, salt, and pepper.
  4. Arrange the endives in an ovenproof dish. Pour the sauce over the endives and sprinkle Gruyere cheese on top. Bake for 20-25 minutes until golden brown. Serve hot.
