Frittata with Asparagus and Goat Cheese

Ingredients:

  • 8 eggs
  • 1/4 cup milk
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 pound asparagus, trimmed and cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 4 ounces goat cheese, crumbled

Directions:

  1. Preheat the oven to 375°F.
  2. In a bowl, whisk together the eggs, milk, Parmesan cheese, salt, and black pepper.
  3. In a 10-inch oven-safe skillet, heat the olive oil over medium heat. Add the asparagus and garlic and cook, stirring frequently, until the asparagus is tender, about 5 minutes.
  4. Pour the egg mixture over the asparagus in the skillet. Gently stir to distribute the asparagus evenly throughout the eggs.
