Frittata with Asparagus and Goat Cheese
Ingredients:
- 8 eggs
- 1/4 cup milk
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 pound asparagus, trimmed and cut into 1-inch pieces
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 4 ounces goat cheese, crumbled
Directions:
- Preheat the oven to 375°F.
- In a bowl, whisk together the eggs, milk, Parmesan cheese, salt, and black pepper.
- In a 10-inch oven-safe skillet, heat the olive oil over medium heat. Add the asparagus and garlic and cook, stirring frequently, until the asparagus is tender, about 5 minutes.
- Pour the egg mixture over the asparagus in the skillet. Gently stir to distribute the asparagus evenly throughout the eggs.
- Sprinkle the crumbled goat cheese over the top of the eggs.
