Fritters with Two Anchovies, Pepper Coulis
Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup milk
- 1 egg
- 2 anchovy fillets (chopped)
- 1 red bell pepper (roasted and peeled)
- 1 garlic clove (minced)
- 1/4 cup olive oil
Instructions
- In a mixing bowl, whisk together the flour, baking powder, salt, and pepper.
- In another bowl, beat together the milk and egg until well blended.
- Add the chopped anchovies to the egg mixture and mix well.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Heat a large skillet over medium heat and add enough olive oil to fill it to 1/4 inch.
- Once the oil is hot, drop spoonfuls of the batter into the skillet and cook until golden brown for about 2 minutes.
- Turn the fritters over and cook until the other side is golden brown for about 1 minute more.
- Remove the fritters from the skillet and place them on a paper towel to drain off any excess oil.
- In a blender, combine the roasted red pepper, garlic, and olive oil. Blend until smooth to make the pepper coulis.
- Serve the fritters hot, drizzled with the pepper coulis.
