Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup milk
  • 1 egg
  • 2 anchovy fillets (chopped)
  • 1 red bell pepper (roasted and peeled)
  • 1 garlic clove (minced)
  • 1/4 cup olive oil

Instructions

  1. In a mixing bowl, whisk together the flour, baking powder, salt, and pepper.
  2. In another bowl, beat together the milk and egg until well blended.
  3. Add the chopped anchovies to the egg mixture and mix well.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Heat a large skillet over medium heat and add enough olive oil to fill it to 1/4 inch.
  6. Once the oil is hot, drop spoonfuls of the batter into the skillet and cook until golden brown for about 2 minutes.
  7. Turn the fritters over and cook until the other side is golden brown for about 1 minute more.
  8. Remove the fritters from the skillet and place them on a paper towel to drain off any excess oil.
  9. In a blender, combine the roasted red pepper, garlic, and olive oil. Blend until smooth to make the pepper coulis.
  10. Serve the fritters hot, drizzled with the pepper coulis.
