Ingredients:

  • 2 medium-sized eggplants
  • 1 cup bulgur
  • 2 cups vegetable broth
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 3 tbsp olive oil, divided
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp lemon juice

Instructions:

  1. Preheat the grill or grill pan over medium-high heat.
  2. Cut the eggplants in half lengthwise. Brush them with 1 tablespoon of olive oil and sprinkle with salt and pepper. Grill the eggplant halves, cut side down, until they are charred and tender, about 5-6 minutes per side.
  3. Once the eggplants are cooked, remove them from the grill and let them cool for a few minutes. Use a spoon to scoop out the centers of the eggplant halves, leaving about a 1/2 inch border around the edges. Chop up the scooped eggplant and set it aside.
  4. In a medium-sized saucepan, heat the remaining 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until it is translucent, about 5-7 minutes.
  5. Add the minced garlic and sauté for an additional 1-2 minutes.
  6. Add the bulgur to the saucepan with the onion and garlic and stir well to combine. Add the vegetable broth, salt, and black pepper. Bring to a boil, reduce the heat to low, cover and simmer for 15-20 minutes until the bulgur is tender and the broth has been absorbed.
  7. Stir in the chopped eggplant, parsley, and lemon juice. Mix well.
  8. Divide the bulgur mixture evenly among the eggplant halves.
  9. Place the stuffed eggplants back onto the grill over medium heat and cook for an additional 5-6 minutes, until the bulgur filling is heated through and the eggplant is slightly charred on the edges.
  10. Remove the eggplants from the heat. Serve hot and enjoy!
