Grilled Eggplant Stuffed with Bulgur
Ingredients:
- 2 medium-sized eggplants
- 1 cup bulgur
- 2 cups vegetable broth
- 1 onion, chopped
- 4 cloves garlic, minced
- 3 tbsp olive oil, divided
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup fresh parsley, chopped
- 2 tbsp lemon juice
Instructions:
- Preheat the grill or grill pan over medium-high heat.
- Cut the eggplants in half lengthwise. Brush them with 1 tablespoon of olive oil and sprinkle with salt and pepper. Grill the eggplant halves, cut side down, until they are charred and tender, about 5-6 minutes per side.
- Once the eggplants are cooked, remove them from the grill and let them cool for a few minutes. Use a spoon to scoop out the centers of the eggplant halves, leaving about a 1/2 inch border around the edges. Chop up the scooped eggplant and set it aside.
- In a medium-sized saucepan, heat the remaining 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until it is translucent, about 5-7 minutes.
- Add the minced garlic and sauté for an additional 1-2 minutes.
- Add the bulgur to the saucepan with the onion and garlic and stir well to combine. Add the vegetable broth, salt, and black pepper. Bring to a boil, reduce the heat to low, cover and simmer for 15-20 minutes until the bulgur is tender and the broth has been absorbed.
- Stir in the chopped eggplant, parsley, and lemon juice. Mix well.
- Divide the bulgur mixture evenly among the eggplant halves.
- Place the stuffed eggplants back onto the grill over medium heat and cook for an additional 5-6 minutes, until the bulgur filling is heated through and the eggplant is slightly charred on the edges.
- Remove the eggplants from the heat. Serve hot and enjoy!
