Lamb and Turnip Tagine Recipe

Ingredients:

  • 2 pounds of lamb, cut into chunks
  • 4 tablespoons of olive oil
  • 1 diced onion
  • 4 cloves of minced garlic
  • 2 teaspoons of paprika
  • 1 teaspoon of cumin
  • 1 teaspoon of cinnamon
  • 1 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 1/2 cup of dried apricots
  • 4 turnips, peeled and cut into chunks
  • 4 cups of chicken broth
  • 1/4 cup of chopped fresh parsley

Instructions:

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the lamb to the pot and cook until browned on all sides. Remove the lamb from the pot and set it aside.

  8. Cook the tagine for 1½ to 2 hours, until the lamb is tender and the turnips are cooked through.
  9. Stir in the chopped parsley.
  10. Season with additional salt and pepper to taste.
  11. Serve hot over couscous.
