Ingredients:

  • 2 lamb collars, bone-in
  • 2 tbsp olive oil
  • 2 onions, chopped

  • 1 tbsp flour

  • Salt and pepper, to taste

Instructions:

  1. Preheat the oven to 350°F (180°C).
  2. Season the lamb collars with salt and pepper.
  3. Heat olive oil in a large oven-safe pot over medium heat. Sear the lamb for 8-10 minutes until browned on all sides. Remove the lamb from the pot and set aside.
  4. Add onion and garlic to the pot and cook for 2-3 minutes.
  5. Add the tomato paste, carrots, celery, and thyme and cook for another 5-7 minutes until the vegetables are slightly softened.
  6. Sprinkle the flour over the vegetables and cook for another minute, stirring constantly.
  7. Slowly pour in the beef broth and red wine, stirring constantly, until the mixture comes to a simmer.
  8. Add the lamb back into the pot, along with the bay leaf, potatoes, and frozen pearl onions.
  9. Cover the pot and bake in the preheated oven for 1 ½ – 2 hours, or until the lamb is tender and falls off the bone.
  10. Remove the pot from the oven and discard the bay leaf.
  11. Stir in the frozen peas and let them cook for 2-3 more minutes until they are heated through.
  12. Season the navarin with salt and pepper to taste and serve hot.
