Ingredients:

  • 1 package of fresh lasagna sheets
  • 1/2 cup extra-virgin olive oil
  • 3 cloves garlic, minced

  • 1/2 cup panko bread crumbs
  • 3 medium zucchinis, cut into 1/4 inch pieces
  • 1 lemon, zested

Instructions:

Lamb Ravioli:

  1. In a mixing bowl, combine the ground lamb, chopped mint, panko bread crumbs, and a pinch of salt and pepper. Mix well.
  2. On a clean work surface, cut the lasagna sheets into 2 inch squares.
  3. Place about a tablespoon of lamb mixture onto the center of each square.
  4. Fold the square in half to create a triangle shape, pressing the edges together to seal the ravioli.
  5. Bring a large pot of salted water to a boil. Add the ravioli and cook for 3-4 minutes, or until they float to the surface.
