  • 4 cloves of garlic, minced
  • 2 tbsp olive oil
  • 2 tsp dried rosemary
  • 2 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Cooking Instructions

  1. Preheat the oven to 160°C.
  2. In a small bowl, mix together the minced garlic, olive oil, rosemary, thyme, salt, and pepper.
  3. Prepare the lamb shoulder by trimming any excess fat and scoring the skin with a sharp knife.
  4. Place the lamb shoulder in a roasting pan and generously rub the garlic and herb mixture all over the meat.
  5. Cover the roasting pan with foil and bake in the preheated oven for 3-4 hours, until the lamb is tender and falls off the bone.
  6. Remove the foil from the roasting pan and turn up the oven temperature to 220°C. Place the lamb back in the oven for another 10-15 minutes until the skin is crispy and golden brown.
  7. Remove the lamb from the oven and let it rest for 10-15 minutes before carving and serving.
