Lamb Shoulder in the Oven Recipe
Ingredients
- 1 lamb shoulder (around 1.5kg)
- 4 cloves of garlic, minced
- 2 tbsp olive oil
- 2 tsp dried rosemary
- 2 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
Cooking Instructions
- Preheat the oven to 160°C.
- In a small bowl, mix together the minced garlic, olive oil, rosemary, thyme, salt, and pepper.
- Prepare the lamb shoulder by trimming any excess fat and scoring the skin with a sharp knife.
- Place the lamb shoulder in a roasting pan and generously rub the garlic and herb mixture all over the meat.

- Remove the foil from the roasting pan and turn up the oven temperature to 220°C. Place the lamb back in the oven for another 10-15 minutes until the skin is crispy and golden brown.
- Remove the lamb from the oven and let it rest for 10-15 minutes before carving and serving.
