Leg of lamb with garlic: family recipe

This is a classic family recipe that never fails to impress. The combination of succulent lamb, fragrant garlic and Mediterranean herbs is simply irresistible

Ingredients

  • 1 Leg of lamb (2-3 kg)
  • 15 garlic cloves
  • 4 tbsp. olive oil
  • 2 tbsp. chopped rosemary
  • 2 tbsp. chopped thyme
  • 2 tsp. salt
  • 1 tsp. freshly ground black pepper

Instructions

  1. Preheat the oven to 180°C.
  2. Peel the garlic cloves and cut them in half.
  3. Make small incisions all over the leg of lamb and insert garlic cloves into the meat.
  4. In a bowl, mix together olive oil, rosemary, thyme, salt and black pepper.
  5. Rub the herb mixture all over the leg of lamb, making sure to cover it evenly.
  6. Place the leg of lamb in a large roast pan and roast for 2-2.5 hours or until the internal temperature reaches 60°C for medium rare.
  7. Remove the lamb from the oven and cover it with foil. Let it rest for 10-15 minutes before carving.
