Leg of lamb with garlic: family recipe
This is a classic family recipe that never fails to impress. The combination of succulent lamb, fragrant garlic and Mediterranean herbs is simply irresistible
Ingredients
- 1 Leg of lamb (2-3 kg)
- 15 garlic cloves
- 4 tbsp. olive oil
- 2 tbsp. chopped rosemary
- 2 tbsp. chopped thyme
- 2 tsp. salt
- 1 tsp. freshly ground black pepper
Instructions
- Preheat the oven to 180°C.
- Peel the garlic cloves and cut them in half.
- Make small incisions all over the leg of lamb and insert garlic cloves into the meat.
- In a bowl, mix together olive oil, rosemary, thyme, salt and black pepper.
- Rub the herb mixture all over the leg of lamb, making sure to cover it evenly.
- Place the leg of lamb in a large roast pan and roast for 2-2.5 hours or until the internal temperature reaches 60°C for medium rare.
- Remove the lamb from the oven and cover it with foil. Let it rest for 10-15 minutes before carving.
