Ingredients:

  • 2 lbs baby potatoes, skin on
  • 1/4 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano
  • salt and black pepper, to taste

Directions:

  1. Preheat your oven to 400ºF (200ºC).
  2. In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, salt, and black pepper.
  3. Add the baby potatoes to the bowl and toss well to coat evenly with the marinade.
  4. Arrange the potatoes in a single layer on a baking dish and bake for 25-30 minutes, or until the potatoes are golden brown and tender.
  5. Remove from the oven and serve hot.
