Lentil Sausage

Ingredients:

  • 1 cup red lentils
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

  • 1/2 cup breadcrumbs
  • 1/4 cup chopped parsley
  • 1/4 cup chopped scallions
  • 4-6 sausage casings

Instructions:

  1. Cook the lentils according to package instructions until they are soft but not mushy. Drain and set aside.

  3. Add the smoked paprika, cumin, chili powder, salt, and black pepper to the pan and stir to combine.
