Ligurian-style Stuffed Zucchini
Ingredients:
- 4 medium-sized zucchini
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 1/2 lemon, zested
- 1/2 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 1/4 cup chopped basil
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions:
- Preheat the oven to 375°F.
- Cut off the top of each zucchini and scoop out the inside with a spoon, leaving a 1/4 inch thick shell on the outside.
- Chop the scooped out zucchini flesh and set aside.
- In a large pan, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, around 3-5 minutes. Add the chopped zucchini flesh and cook for another 5-7 minutes until tender.
- Add the breadcrumbs, Parmesan cheese, lemon zest, parsley and basil. Season with salt and pepper to taste. Stir until the breadcrumbs are coated in the vegetable mixture and remove from heat.
- Stuff each zucchini with the vegetable mixture and place in a baking dish. Bake for 30-35 minutes until the zucchini is tender and the top is golden brown.
