Lute Casserole

Ingredients:

  • 1 pound Lute squash, peeled and sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1/2 cup sour cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup bread crumbs
  • 2 tablespoons olive oil
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F.
  2. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté until tender.
  3. Add the ground beef and cook until browned. Drain any excess fat.
  4. Stir in the cooked rice, sour cream, grated Parmesan cheese, dried basil, salt and pepper.
  5. In a greased 9×13 inch baking dish, layer the sliced Lute squash.
  6. Pour the beef mixture on top of the squash.
  7. Sprinkle bread crumbs on top.
  8. Bake in the preheated oven for 30-35 minutes.
