Manche blue lobster with hazelnut butter

Manche Blue Lobster with Hazelnut Butter Recipe

Ingredients

  • 2 live Manche Blue lobsters
  • 1/2 cup unsalted butter, softened
  • 2 tbsp chopped fresh parsley
  • 2 tbsp chopped fresh chives
  • 2 tbsp chopped fresh tarragon
  • 2 tbsp chopped hazelnuts
  • 1/2 lemon, juiced
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 375°F.
  2. Bring a large pot of salted water to a boil over high heat.
  3. Place your lobsters in the boiling water and cook for 7-10 minutes, or until they turn bright red.
  4. Remove the lobsters from the water and let them cool slightly.
  5. Meanwhile, prepare your hazelnut butter. In a small bowl, combine the softened butter, chopped parsley, chives, tarragon, chopped hazelnuts, lemon juice, salt, and pepper. Mix well until everything is combined.
  6. Once the lobsters are cool enough to handle, using kitchen shears, cut the shell from the top of the tail to the head. Remove the meat and place it on a baking sheet.
  7. Spoon the hazelnut butter mixture onto each of the lobster halves, spreading evenly on top of the meat.
  8. Place the baking sheet into the preheated oven and bake for 5-8 minutes or until the butter is melted and bubbling.
  9. Remove the baking sheet from the oven and let the lobsters cool slightly before serving.
