Margherita Cake Recipe
Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup whole milk
- 1/2 teaspoon vanilla extract
- 1/2 cup tomato sauce
- 3/4 cup fresh mozzarella cheese, grated
- 1/4 cup fresh basil, chopped
- 1/4 teaspoon red pepper flakes
Instructions
- Preheat oven to 350°F. Grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs, one at a time, and mix until well combined.
- Add the dry ingredients to the butter mixture in 3 parts, alternating with the milk and vanilla extract. Mix until just combined.
- Stir in the tomato sauce, mozzarella cheese, basil, and red pepper flakes.
- Pour the batter into the prepared cake pan and bake for 35-40 minutes or until a toothpick inserted into the center of the cake comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Serving Suggestions
This Margherita Cake makes a great appetizer or party dish. Serve wedges of the cake with a side of marinara sauce for dipping. It can also be served as a side dish or as a main course, paired with a fresh green salad. The cake is best served warm, but it can also be eaten cold or reheated in the oven or microwave.
