Margherita Cake

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup whole milk
  • 1/2 teaspoon vanilla extract
  • 1/2 cup tomato sauce
  • 3/4 cup fresh mozzarella cheese, grated
  • 1/4 cup fresh basil, chopped
  • 1/4 teaspoon red pepper flakes

Instructions

  1. Preheat oven to 350°F. Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs, one at a time, and mix until well combined.
  4. Add the dry ingredients to the butter mixture in 3 parts, alternating with the milk and vanilla extract. Mix until just combined.
  5. Stir in the tomato sauce, mozzarella cheese, basil, and red pepper flakes.
  6. Pour the batter into the prepared cake pan and bake for 35-40 minutes or until a toothpick inserted into the center of the cake comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Serving Suggestions

This Margherita Cake makes a great appetizer or party dish. Serve wedges of the cake with a side of marinara sauce for dipping. It can also be served as a side dish or as a main course, paired with a fresh green salad. The cake is best served warm, but it can also be eaten cold or reheated in the oven or microwave.
