Mimosa Cupcake

Ingredients:

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup unsalted butter, room temperature
  • 3/4 cup granulated sugar
  • 1 egg, room temperature
  • 1/2 cup whole milk
  • 1/4 cup fresh orange juice
  • 1 tbsp orange zest
  • 1/4 cup champagne (or sparkling wine)
  • 1 tsp vanilla extract

Instructions:

  1. Preheat the oven to 350°F. Line a muffin tin with paper liners.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, cream butter and sugar together until light and fluffy. Add in the egg and beat until well combined.
  4. Combine milk, orange juice, orange zest, and champagne in a small bowl.
  5. Add the dry ingredient mixture to the butter mixture in three parts, alternating with the wet ingredient mixture and beginning and ending with the dry mixture.
  6. Stir in vanilla extract.
  7. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  8. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the cupcakes cool for 5 minutes in the pan, then transfer to a wire rack to cool completely.
