Mimosa Cupcake
Ingredients:
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 cup unsalted butter, room temperature
- 3/4 cup granulated sugar
- 1 egg, room temperature
- 1/2 cup whole milk
- 1/4 cup fresh orange juice
- 1 tbsp orange zest
- 1/4 cup champagne (or sparkling wine)
- 1 tsp vanilla extract
Instructions:
- Preheat the oven to 350°F. Line a muffin tin with paper liners.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, cream butter and sugar together until light and fluffy. Add in the egg and beat until well combined.
- Combine milk, orange juice, orange zest, and champagne in a small bowl.
- Add the dry ingredient mixture to the butter mixture in three parts, alternating with the wet ingredient mixture and beginning and ending with the dry mixture.
- Stir in vanilla extract.
- Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Let the cupcakes cool for 5 minutes in the pan, then transfer to a wire rack to cool completely.
