Minced Meat Tagine with Eggs

This Moroccan inspired dish combines flavorful minced meat with soft and creamy eggs for a delicious and hearty meal that your taste buds will love.

Ingredients:

  • 500g minced meat (beef or lamb)
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp ginger, grated
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp cinnamon
  • 1/4 tsp cayenne pepper
  • 2 tbsp tomato paste
  • 4 eggs
  • Handful of fresh parsley, chopped (for garnish)
  • Salt and pepper, to taste
  • 2 tbsp olive oil

Instructions:

  1. Heat the olive oil in a large skillet or tagine pot over medium-high heat.
  2. Add the chopped onions and sauté until soft and translucent, about 5 minutes.
  3. Add minced garlic and grated ginger and cook for another 2 minutes until fragrant.
  4. Add the minced meat and break it up using a wooden spoon. Cook for about 5-7 minutes until evenly browned.
  5. Add the spices, tomato paste, salt and pepper and stir to combine well.
  6. Pour in enough water to cover the meat and bring to a boil. Reduce heat to low, cover and simmer for 20 minutes.
  7. Crack the eggs into the tagine on top of the meat mixture, cover and cook for an additional 5-7 minutes, until the eggs are set to your liking.
  8. Garnish with fresh parsley and serve hot with crusty bread or couscous.
