Minced Meat Tagine with Eggs
This Moroccan inspired dish combines flavorful minced meat with soft and creamy eggs for a delicious and hearty meal that your taste buds will love.
Ingredients:
- 500g minced meat (beef or lamb)
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tsp ginger, grated
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp cinnamon
- 1/4 tsp cayenne pepper
- 2 tbsp tomato paste
- 4 eggs
- Handful of fresh parsley, chopped (for garnish)
- Salt and pepper, to taste
- 2 tbsp olive oil
Instructions:
- Heat the olive oil in a large skillet or tagine pot over medium-high heat.
- Add the chopped onions and sauté until soft and translucent, about 5 minutes.
- Add minced garlic and grated ginger and cook for another 2 minutes until fragrant.
- Add the minced meat and break it up using a wooden spoon. Cook for about 5-7 minutes until evenly browned.
- Add the spices, tomato paste, salt and pepper and stir to combine well.
- Pour in enough water to cover the meat and bring to a boil. Reduce heat to low, cover and simmer for 20 minutes.
- Crack the eggs into the tagine on top of the meat mixture, cover and cook for an additional 5-7 minutes, until the eggs are set to your liking.
- Garnish with fresh parsley and serve hot with crusty bread or couscous.
