Ingredients:

  • 5 oz monkfish fillet, diced
  • 2 ciabatta rolls
  • 2 cloves of garlic, minced
  • 1/2 tbsp olive oil
  • 1/2 tbsp butter
  • 1 tsp dried thyme
  • salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F.
  2. Cut the ciabatta rolls in half and place them on a baking sheet, cut side up.

  4. Add garlic, monkfish, thyme, salt and pepper.
  5. Sauté the mixture for 3-4 minutes until the monkfish is cooked through.
  6. Spoon the mixture onto each half of the ciabatta rolls.
  7. Bake the rolls in the oven for 8-10 minutes until slightly crisp.
  8. Serve hot and enjoy!
