Neapolitan Casatiello Recipe

Ingredients:

  • 4 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 tablespoon salt
  • 1/4 cup vegetable oil
  • 1 package active dry yeast
  • 1 1/2 cups warm water
  • 1 pound salami or pepperoni, thinly sliced

Instructions:

  1. In a large bowl, combine the flour, sugar, and salt.
  2. Add the vegetable oil, yeast, and warm water. Mix until dough forms. Cover the bowl with a towel and let the dough rise for 1 hour.
  3. Preheat the oven to 375°F (190°C).
  4. Grease a 10-inch (25 cm) cake pan.
  5. Once the dough has risen, punch it down and divide into two equal parts. Roll out one part into a circle about ½ inch (1 cm) thick.
  6. Line the cake pan with the dough, letting it drape over the edges.
  7. Add a layer of salami or pepperoni, followed by a layer of diced ham.
  8. Add a layer of each cheese, followed by 2 beaten eggs and 2 tablespoons of olive oil.
  9. Roll out the second half of the dough into a circle the same size as the top of the cake pan.
  10. Place the dough on top of the cheese and egg mixture and press the edges together.
  11. Cut a small hole in the center of the dough to allow steam to escape.
  12. Brush the top with beaten egg and olive oil.
