Ocean Fondue: Easy Mediterranean Recipe (Serves 6)
Ingredients:
- 1/2 lb. of firm white fish, such as halibut or cod, cut into bite-size pieces
- 1/2 lb. of medium-sized shrimp, peeled and deveined
- 1/2 lb. of scallops, cleaned and patted dry
- 1/2 lb. of mussels, scrubbed and debearded
- 1/2 lb. of clams, scrubbed and cleaned
- 2 cups of seafood broth or chicken broth
- 1/2 cup of white wine
- 1/2 onion, chopped
- 3 garlic cloves, minced
- 1/4 cup of olive oil
- 1 tsp. of dried basil
- 1 tsp. of dried oregano
- 1 tsp. of dried thyme
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions:
- Heat olive oil in a large pot over medium heat. Add onion and garlic and cook until soft, about 5 minutes.
- Add white wine and let it cook for 2-3 minutes until it has reduced by half.
- Add the seafood broth and bring to a boil. Add the dried basil, oregano, thyme, salt and pepper. Lower the heat and let it simmer for 10-15 minutes.
- Meanwhile, prepare the seafood. Cut the fish into bite-size pieces, peel and devein the shrimp, clean and pat dry the scallops, scrub and debeard the mussels and clams.
- Divide the seafood among 6 small bowls and, if desired, add a tablespoon of olive oil and a sprinkle of salt and pepper to each.
- When the broth has simmered, place a fondue pot in the center of the table over a small burner or low heat source.
- With a ladle, pour the broth into the fondue pot, about 1/2 to 2/3 full.
- Each person, using a fondue fork, can then dip their seafood in the hot broth until it is cooked through, about 3-5 minutes depending on the seafood. Enjoy with crusty bread and a glass of white wine!
- Garnish with fresh parsley before serving.
