Ossobuco Milanese Recipe

Ingredients:

  • 4 veal shanks, about 2 inches thick
  • 1/2 cup all-purpose flour
  • 1/4 cup olive oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped carrot
  • 4 garlic cloves, minced
  • 1 cup dry white wine
  • 2 cups beef broth
  • 1 (28-ounce) can of crushed tomatoes
  • 2 bay leaves
  • Zest of 1 lemon
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 350°F.
  2. Season the veal shanks well with salt and pepper, then coat them in flour. Shake off any excess flour.
  3. In a large, ovenproof Dutch oven, heat the olive oil over medium-high heat. Sear the veal shanks on all sides until browned, about 5 minutes per side. Transfer the shanks to a plate and set aside.
  4. Reduce the heat to medium and add the onion, celery, carrot, and garlic to the pot. Cook the vegetables until softened, about 5 minutes.
  5. Pour in the white wine and bring to a simmer, scraping up any browned bits from the bottom of the pot with a wooden spoon. Simmer until the wine has reduced by half, about 5 minutes.
  6. Add the beef broth, crushed tomatoes, bay leaves, lemon zest, and salt and pepper to the pot and stir well to combine.
  7. Return the veal shanks to the pot, making sure they are submerged in the liquid. Bring the liquid to a simmer, then cover the pot and transfer it to the oven.
  8. Braise the veal shanks in the oven for 2-3 hours, or until the meat is very tender and falls off the bone.
  9. Remove the pot from the oven and let it cool slightly. Use a slotted spoon to remove the veal shanks from the pot and transfer them to a serving plate.
  10. Skim any fat from the surface of the braising liquid and discard the bay leaves. If the sauce is too thin, you can thicken it by simmering it on the stove for a few minutes until it reduces to your desired consistency.
  11. Serve the veal shanks in shallow bowls, spooning the braising liquid over the top. Garnish with gremolata (a mixture of finely chopped parsley, garlic, and lemon zest) if desired.
