Parmentier of Carbonnade Flamande Recipe with Beer
Ingredients:
- 2 lbs chuck roast, cut into bite-sized pieces
- 2 tbsp all-purpose flour
- 2 tbsp olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 cup dark beer
- 2 tbsp brown sugar
- 2 tbsp apple cider vinegar
- 2 bay leaves
- 1 tsp dried thyme
- Salt and pepper, to taste
- 3 lbs Yukon gold potatoes, peeled and cut into chunks
- 1/2 cup milk
- 4 tbsp unsalted butter
Instructions:
- Preheat the oven to 375°F.
- In a large Dutch oven, heat the olive oil over medium-high heat. Add the beef and cook until browned on all sides, about 5-7 minutes. Remove the beef from the pot and set aside.
- Reduce the heat to medium and add the onions to the pot. Cook for 5 minutes or until softened, stirring occasionally. Add the garlic and cook for an additional minute.
- Sprinkle the flour over the onions and garlic and stir to combine. Cook for 1-2 minutes or until the flour is lightly browned.
- Add the beef broth, beer, brown sugar, apple cider vinegar, bay leaves, thyme, salt, and pepper to the pot. Stir to combine.
- Return the beef to the pot and bring the mixture to a simmer. Cover the pot and cook in the oven for 2 hours or until the beef is tender and the sauce has thickened.
- While the beef is cooking, prepare the mashed potatoes. Add the potatoes to a large pot and cover with cold water. Bring to a boil and cook until tender, about 15 minutes. Drain the potatoes and return them to the pot.
- Add the milk and butter to the pot with the potatoes. Mash the potatoes until smooth and season with salt and pepper to taste.
- Remove the bay leaves from the beef mixture and discard. Spread the beef mixture evenly in the bottom of a large baking dish.
- Spoon the mashed potatoes over the beef mixture and spread evenly.
- Bake the Parmentier for 25-30 minutes or until the top is golden brown.
- Serve hot and enjoy!
