Ingredients:

  • 1 large eggplant
  • 1/2 cup Italian breadcrumbs
  • 1/4 cup all-purpose flour
  • 2 eggs
  • 1/4 cup grated parmesan cheese
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup marinara sauce
  • 4 ciabatta rolls
  • 8 slices mozzarella cheese

Instructions:

  1. Preheat oven to 400°F (200°C). Slice eggplant into 1/4-inch thick rounds.
  2. In a bowl, combine breadcrumbs, parmesan cheese, dried basil, dried oregano, salt and pepper.
  3. In another bowl, whisk eggs until combined.
  4. Place flour in a third bowl.
  5. Dip eggplant slices into flour, then eggs, then breadcrumbs. Place on a baking sheet and bake for 15-20 minutes, or until golden brown and tender.
  6. While the eggplant is baking, heat marinara sauce in a small saucepan over medium heat.
  7. Assemble sandwich by slicing open ciabatta rolls and layering cooked eggplant, marinara sauce, and mozzarella cheese.
  8. Place sandwiches on a baking sheet and broil on high until cheese is melted and bubbly, about 2-3 minutes.
  9. Remove from oven and serve hot.
