Parsnip gnocchi – Delicious

Parsnip Gnocchi Recipe

Ingredients

  • 2 pounds of parsnips, peeled and chopped into small chunks
  • 1 cup of all-purpose flour
  • 1 egg
  • 1 teaspoon of salt
  • 1/2 teaspoon of nutmeg
  • 2 tablespoons of olive oil
  • 1/2 cup of grated Parmesan cheese

Instructions

  1. Bring a large pot of salted water to a boil and add the parsnips. Cook for about 20 minutes until they are soft and tender. Drain and let cool slightly.
  2. Mash the parsnips in a large mixing bowl until there are no large chunks left.
  3. Add the flour, egg, salt, and nutmeg to the bowl and mix until a dough forms.
  4. Dust a clean work surface with flour and divide the dough into six equal parts.
  5. Roll each part into a long, thin rope about 1/2 inch thick.
  6. Cut each rope into 1-inch pieces.
  7. Bring a large pot of salted water to a boil and add the gnocchi.
  8. Cook the gnocchi for about 2-3 minutes until they rise to the surface, then use a slotted spoon to transfer them to a plate.
  9. In a large skillet, heat the olive oil over medium heat. Add the gnocchi and cook for about 5 minutes until they are slightly browned and crispy.
  10. Serve hot with grated Parmesan cheese on top.

Verdict

This parsnip gnocchi is a delicious alternative to traditional potato gnocchi. The nutmeg adds a warm, spicy flavor that pairs perfectly with the sweetness of the parsnips. Sautéing the gnocchi in olive oil gives them a crispy exterior, while the Parmesan cheese adds a salty, savory finish.
